How to make Indian Rasmalai??
Ras Malai is a popular Indian dessert made with cheese balls that are soaked in sweetened milk. Here's a recipe for making ras malai:
Ingredients:
For the rasgulla (cheese balls):
1 liter full-fat milk
2 tablespoons lemon juice or vinegar
3 cups water
1 cup sugar
For the ras (sweetened milk):
1 liter full-fat milk
1 cup sugar
1/2 teaspoon cardamom powder
A few strands of saffron
Chopped nuts for garnishing (optional)
Instructions:
To make the rasgulla, bring the milk to a boil in a heavy-bottomed pot. Once the milk boils, add the lemon juice or vinegar and stir gently until the milk curdles.
Turn off the heat and let it sit for a minute. Then, pour the mixture through a muslin cloth or cheesecloth to strain out the whey. Rinse the cheese with cold water to remove any lemon or vinegar taste.
Squeeze out the excess water from the cheese by tying the cloth and hanging it for 30 minutes.
Knead the cheese until it becomes smooth and lump-free. Then, divide the cheese into small balls.
In a separate pot, combine the water and sugar and bring it to a boil. Add the cheese balls to the pot and cook for 10-12 minutes, or until they become spongy and double in size.
Remove the pot from the heat and let the rasgullas cool in the syrup.
To make the ras, heat the milk in a heavy-bottomed pot and bring it to a boil. Add the sugar, cardamom powder, and saffron strands. Stir until the sugar dissolves and the milk thickens.
Add the rasgullas to the milk and let them soak for at least an hour.
Garnish with chopped nuts if desired and serve chilled. Enjoy your delicious Ras Malai!
